The Famous St.Claire Creamed Chipped Beef!
2 large onions chopped
1/2 cup butter
1 cup flour
6 cups milk (Iíve never really measured)
2 large jars chipped beef
1 bunch parsley chopped
freshly ground pepper
Saute onions in butter in a large skillet or sauce pan until soft.
Do not brown. Add flour and cook without browning for 2 to 5 minutes. Slowly add first 4 cups of milk stirring constantly over medium heat. Add chopped chipped beef and parsley. Add freshly ground pepper. Allow sauce to simmer a minimum of 1 hour. As it continues to thicken, add milk to suit your desired consistency.
Serve over lightly browned english muffins.
