INGREDIENTS:

1/4 cup olive oil                           
1/4 cup minced garlic                     
1 lb linguine                                   
2 lbs chicken, cut into thin strips    (If you choose to grill, cut into strips after grilling.)
3 large poblano chilis, seeded and cut into match stick strips              
4 plum tomatoes, seeded and diced
3/4 cup thinly sliced fresh basil       
4 oz. Proscuitto, cut into thin strips  
3 Tbs. Butter                                 
1 cup grated parmesan cheese

Saute garlic in oil. Strain oil and reserve garlic.Add chicken strips to oil and saute for 5 minutes (If you choose to grill your chicken, add it after the next step).

 Add chilis and saute 2 minutes, add tomatoes, half the basil, proscuitto and garlic. Saute until chicken is cooked through.

Remove from heat and add butter. Stir until melted.(For healthier version, omit the butter - you won't miss it at all).

 Toss with cooked linguine, add remaining basil and serve with cheese.
